Easy Pizza Dough Topped with Goat Cheese and Morel Mushrooms

The bad thing about making your own pizza dough at home is you never want take out or delivery again. It’s not that take out pizza isn’t good, it’s just that the crust loses something on its way to your house. Especially if you like your pizza crust thin and crunchy like we do. Thin and crunchy pizzas get cold quickly and cold pizza is really only good leftover for breakfast.

Every couple of weeks, we make homemade pizza, put on a movie and eat in front of the television. I rarely top a pizza the same way twice, but Neko and I do have a few shared favorite pizza topping ingredients: mushrooms, olives, capers and goat cheese. I was at the store grabbing these things the other day when I realized that they had fresh morels! Morels are the best mushrooms ever. They’re the filet mignon of mushrooms. And their price reflects that. (Fresh morels go for $39.99 per pound around here.)

I had a stroke of genius when I realized that the top of a pizza would be an excellent place for a morel. Buying a bunch of them is cost inhibitive, but this way you just need a few. I got $3 worth of mushrooms, sliced them thin and had enough to generously top my pizza.

And this time I let Neko make the pizza dough, just to show how easy it is. Making your own pizzas at home is well worth the effort. My brother got me a mezzaluna, a pizza stone and a peel a couple of years ago for Christmas and I’ve been hooked ever since. You don’t need these things (but they are handy) to make excellent pizzas at home. You don’t even need a ton of time. I don’t start my dough until 5 or 5:30 in the evening and we eat around 7:30.
