Grilled Peach Salad

Ripe Texas peaches are an excellent summer treat. It takes a good rainy winter to get a decent peach crop, so this year there are peaches everywhere, whereas last year, Texas peaches were hard to find. To make up for all the peaches I didn’t eat last year, I’ve been tearing through them this summer.

Two summers ago I fell in love with grilling peaches. Grilling really softens up the peaches and makes them extra juicy and delicious. Drizzle a grilled peach half with balsamic vinegar and I am in heaven. Since Neko likes peaches, vinegar and cheese, I thought she’d be all over this salad.

But I was wrong. While Eric and I adored this salad, Neko would not touch it. And so it lands right in the “failure” category when it comes to getting my kid to eat it. But it’s still darned tasty.

It took me a while to get Eric to come around to grilled peaches, so I won’t give up. I will keep grilling the fuzzy little guys and offering them to Neko and I’m hopeful that she will eventually love them like I do.

Grilled Peach Salad

3 tablespoons Balsamic vinegar
1 tablespoon Dijon mustard
1/3 cup olive oil
1/2 teaspoon salt

3 peaches, pits removed and cut into wedges
1 tablespoon olive oil
1 teaspoon salt
5 cups baby lettuces
1/2 cup toasted and chopped pecans
1/3 cup crumbled feta cheese

Preheat a grill pan or outdoor grill to medium-high heat.

Combine the vinegar and Dijon in a small bowl. Slowly pour the olive into the bowl, whisking constantly to emulsify. Season with salt.

Place the peaches in a bowl and drizzle with olive oil. Sprinkle with salt and toss well. Place on the grill and cook for 3 to 5 minutes on each side.

Place the lettuces in a large bowl. Add chopped pecans, feta, and cooked peaches. Drizzle salad with dressing and toss to coat.

    Fabulous idea. I love the combo of grilled peaches and feta cheese. We have plenty of delicious peaches here in Greece. I will try this one for sure.
